For the dressing: In a food processor mix a natural yogurt 0% in fat with the juice of a lime and half a lemon, a bunch of cilantro, a tablespoon of EVOO, two cloves of garlic and a little salt.
The dish: Cut a previously boiled potato into cubes, do the same with the cucumber, with half red pepper and tofu. Mix everything cut with a few spoonfuls of the sauce. Place some endive leaves on the plate, pour the mixture and that’s it!
