Bimi, the essence of broccoli, Bimi is a variety produced from the natural union between broccoli and Chinese kale. This vegetable is 100% edible, from the stem to the floret. Bimi has been recognised as a ‘super vegetable’ due to its high content of essential nutrients.
Cut three apricots in small dice and sauté a few minutes next to a bunch of bimi in a pan with a tablespoon of EVOO. Salt and pepper to taste. Serve on a plate with feta cheese, pine nuts and a few dates. Very simple, fast and very good!
